Meal Prep: Banana Pancakes

You don’t need cooking classes or costly meal delivery services to prepare something delicious at home. With a bit of planning and our detailed meal prep guide, you can create amazing dishes with confidence and ease.

Recipe ingredients:

  • 1 ripe banana
  • 2 eggs

Instructions:

Start by mashing the banana with a fork until you get a smooth puree. In a separate bowl, beat the eggs and then add them to the mashed banana. Mix well until the batter is fully combined and smooth.

Next, heat a non-stick skillet over medium heat and lightly grease it with oil or butter. Spoon small portions of the batter into the skillet (about 2 tablespoons per pancake).

Cook for about 1 to 2 minutes per side, or until the edges are set and bubbles form on the surface before flipping.

Tip: Use a thin spatula to flip the pancakes gently and avoid breaking them.

Finally, serve the pancakes warm with your favorite toppings such as honey, fresh fruit, yogurt, or peanut butter.
