Recipe Ingredients:
- 1 egg
- ¼ cup (60 ml/2 fl oz) water
- 2 tablespoons oil
- ¼ teaspoon salt (to taste)
- Black pepper (to taste)
- 1 teaspoon baking powder
- ½ cup (65 grams/2.3 oz) all-purpose flour
- Filling of your choice (cheese, sausage, shredded chicken, vegetables, etc.)
Instructions:
In a bowl, crack the egg and beat it for about 1 minute. Add the water, oil, salt, black pepper, baking powder, and flour to the mixture. Stir well until a smooth batter forms.
If desired, add chopped cilantro or green onions. In a preheated skillet, add a little olive oil and spread it evenly.
Remove the skillet from the heat and pour half of the batter into the skillet, spreading it out evenly. Place your filling of choice (like ham and cheese) on top of the batter.
Then, cover the filling with the remaining batter. Cook over medium heat for about 5 minutes, or until the bottom is golden brown.
Flip the snack and cook for another 3 minutes or until both sides are golden brown. Finally, remove from the skillet and serve as an afternoon snack.
