- large eggs
- 2 cups (16 fl oz) of milk
- 1 cup (7 oz) of sugar
- 2 ½ cups (about 6.25 oz) of cornmeal flakes
- ½ cup (4 fl oz) of vegetable oil
- 1.75 oz (about ⅓ cup) of shredded coconut – (50 g)
- 1 tablespoon of baking powder
- A pinch of salt
Instructions:
First, place the eggs, oil, milk, sugar, salt, and cornmeal in a blender. Then, blend everything well for about 2 minutes. Next, add the shredded coconut and blend briefly. After that, add the baking powder and blend for just a few seconds to incorporate.
Afterward, pour the batter into a 9-inch (23 cm) glass tube pan, greased and sprinkled with sugar.
Then, bake in a preheated oven at 356 ºF (180 ºC) for about 45 minutes. Once baked, remove it from the oven, let it cool slightly, and turn it out of the pan. Finally, a sensational corn cake is ready to serve. Enjoy.
