Start by gathering all the ingredients. In a blender, add the sugar and eggs. Blend until smooth and creamy.
Then, add the bananas, flour, coconut milk, powdered milk, and yeast. Blend everything together until you get a smooth, lump-free batter.
Next, add the melted margarine and vanilla extract. Blend briefly, just enough to combine, and transfer the batter to a mixing bowl.
Cover the bowl with a slightly damp kitchen towel and let the batter rest for about 60 minutes to rise. After that, gently stir the batter.
Place metal ring molds (cooking rings) on a non-stick skillet. Pour the batter into the rings, filling them halfway. Cover the skillet with a lid.
Cook over low heat. Once the bottom is golden brown, carefully flip the cakes and cook the other side until golden as well.
Remove from the skillet and serve warm. Enjoy!
