How to Make Fluffy muffins
Soft, tasty muffins perfect for any time of day—great for guests or family moments. You don’t need cooking classes or costly meal delivery services to prepare something delicious at home. Recipe Ingredients:
- 4 eggs
- 3/4 cup white sugar (5.3 oz / 150g)
- 7 tbsp melted butter, cooled (3.5 oz / 100g)
- 1/2 cup plain unsweetened yogurt (4.4 oz / 125g)
- 2 teaspoons vanilla sugar (0.3 oz / 8g)
- 2 1/2 cups all-purpose flour (10.6 oz / 300g)
- 1/4 cup cold milk (2 fl oz / 60ml)
- 1/4 cup sunflower oil (2 fl oz / 60ml)
- 1 tablespoon baking powder (0.6 oz / 16g)
- A pinch of salt
- Zest of one lemon or orange
Instructions:
First, preheat the oven to 356 °F (180 °C). Then, prepare a muffin pan by lining it with paper liners or lightly greasing it with butter or cooking spray.
Then, in a large mixing bowl, beat the eggs and white sugar until the mixture becomes light and creamy. After that, add the cold milk, sunflower oil, and melted, cooled butter. Mix well until fully combined. Next, add the plain unsweetened yogurt and vanilla sugar, stirring until everything is well blended.
In a separate bowl, sift together the all-purpose flour, baking powder, and a pinch of salt. Then, add lemon or orange zest to the dry mixture and stir briefly to distribute the zest evenly.
After that, gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Mix just until incorporated — be careful not to overmix, as this can result in dense muffins.
Next, spoon the batter into the prepared muffin pan, filling each cup about 2/3 full. This allows the muffins to rise without overflowing.
Then, place in the preheated oven and bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The tops should be golden and spring back lightly when pressed.
Finally, remove the muffins from the oven and let them rest in the pan for 5 minutes. To finish, transfer them to a wire rack to cool completely before serving.
Tips: For best texture, make sure the eggs, milk, and melted butter are at room temperature before mixing. Feel free to add chocolate chips, nuts, or dried fruits to the batter before baking.
