Recipe Ingredients:
- 2 eggs
- Zest of ½ lemon
- Juice of ½ lemon
- A pinch of salt
- 3 ½ tablespoons of demerara sugar (or 2 tablespoons of stevia)
- ⅓ cup of milk (100 ml)
- 3 ½ tablespoons of melted butter (50 grams)
- 4 tablespoons of all-purpose flour
- 2 large apples (or 4 small ones)
- 1 teaspoon of baking powder (such as Royal or another brand)
Instructions:
First, preheat the oven to 356 °F (180 °C). In a bowl, crack the eggs, add a pinch of salt, and whisk well until frothy.
Then, add the sugar or stevia sweetener to the beaten eggs and mix thoroughly.
Next, pour in the milk, stir again, and add the lemon zest to enhance the flavor.
Afterward, add half of the melted butter to the mixture and gradually incorporate the flour in two stages, mixing carefully each time to achieve a smooth batter.
Meanwhile, peel the apples, remove the seeds and core, and slice them into very thin rounds. Drizzle with lemon juice and gently toss to coat.
Then, add the sliced apples to the batter in two or three portions, stirring gently to distribute them evenly.
Finally, fold in the baking powder and pour the batter into a glass rectangular baking dish lined with parchment paper.
Spread the batter evenly and drizzle the remaining melted butter on top.
Bake for approximately 55 minutes at 356 °F (180 °C), or until the cake is golden brown and firm to the touch.
To finish, if desired, dust with powdered sugar before serving. Slice into pieces and enjoy this irresistible apple cake, bringing simplicity and flavor to every bite!
