How to Make Homemade Polvilho Biscuit

Recipe Ingredients:
- 2 or 3 eggs
- 3.5 ounces of cornmeal (100 grams)
- 14 ounces of sour cassava starch (400 grams)
- 7 ounces of mozzarella cheese (or another cheese of your choice, 200 grams)
- ⅓ cup of oil (100 ml)
- ½ cup of water (120 ml)
- ½ cup of milk (120 ml)
- 1 level tablespoon of salt
Instructions:
Dough:
First, in a saucepan, mix the cornmeal, salt, oil, water, and milk. Then, place it over medium heat, stirring continuously until the mixture thickens, forming a dough.
Next, transfer the hot mixture to a bowl and pour it over the sour cassava starch. Mix well to scald the starch evenly.
After that, let the dough rest and cool for about 5 minutes.
Then, add two eggs to the dough and mix well. If necessary, gradually add the third egg until the dough reaches a slightly sticky consistency.
Afterward, grate the cheese and incorporate it into the dough, stirring until smooth.
Next, shape the dough into your preferred form, such as small balls or sticks.
Finally, preheat the oven to 356 °F (180 °C). Arrange the biscuits on a glass baking dish and bake for 30 to 40 minutes, or until golden brown.
