- 3 large eggs
- 1 (14 ounce) can sweetened condensed milk
- 1 1/4 cups self-rising flour
- 4 teaspoons lemon zest (optional)
Instructions:
First, we’ll preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Then, prepare a 9×5-inch loaf pan by spraying it with non-stick cooking spray, lining the bottom and sides with baking paper and spraying it again with non-stick cooking spray. Set it aside.
Next, using a bowl, whisk together the condensed milk, eggs, lemon juice and lemon zest, then add the flour to the mixture and stir just until the flour is moist.
Then pour the batter into the prepared loaf tin and bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
Finally, let the bread cool completely on a rack before removing it from the pan.
