- 500 grams/17.6 oz of potatoes
- 3 tablespoons of cornstarch
- 1 egg
- 4 tablespoons of grated cheese

Instructions:
First, cook the potatoes until they are very soft. Then, pass them through a potato ricer or mash them until you have a smooth purée.
Next, mix in the cornstarch, egg, and salt. Stir well. Then, add the grated cheese, herbs (if using), and any additional seasonings you like, and mix again.
