Meal Prep: Lemon Dessert

Recipe ingredients:

  • 2 cans (28 oz / 790 g) sweetened condensed milk
  • 4 packets lime-flavored gelatin (1.2 oz / 35 g each — total 140 g)
  • 1 lemon (juice + zest)
  • 3½ cups (28.7 fl oz / 850 ml) hot water

Instructions:

In a large mixing bowl, add the 4 packets of lime gelatin and pour in the hot water. Stir thoroughly for a few minutes until the gelatin is fully dissolved.

Next, add 1½ cans (21 oz / 590 g) of sweetened condensed milk to the gelatin mixture. Mix well until smooth and fully incorporated.

Pour the mixture into a lightly greased bundt pan or silicone mold. Transfer it to the refrigerator and chill for about 4 to 6 hours, or until firm.

Condensed Milk Topping:

In a small bowl, combine the remaining 7 oz (200 g) of sweetened condensed milk with the juice of 1 lemon. Stir until smooth and creamy.

To Serve:

Once the gelatin dessert has set, carefully unmold it onto a serving plate. Pour the condensed milk topping over the top, spreading evenly. 

Finish by sprinkling fresh lemon zest for an extra burst of citrus flavor.
