Recipe for Simple Rice Cake: Fluffy and Without Wheat Flour

How to Make Simple Rice Cake

Easy and quick cake with good yield. See below the list of all ingredients and required quantities. And then, a very complete preparation method with details of the recipe.

Recipe Ingredients:

  • 100 grams/3.5 oz package of shredded dried coconut
  • 2 + ½ cups of cooked rice
  • 3 eggs
  • ¼ cup of vegetable oil
  • 1 cup of sugar
  • 200 ml/6.7 fl oz of coconut milk
  • 1 tablespoon of baking powder

Instructions:

First, in a blender, add the cooked rice, coconut milk, eggs, oil, and sugar, and blend until you get a homogeneous mixture (about 2 minutes).

Now, add the shredded dried coconut and baking powder, and mix everything with a spatula.

Next, transfer the batter to an oiled and sugared cake pan. Then, bake in a preheated oven  (200°C – 392°F), let it bake for about 40 minutes, and remove from the oven.

Finally, allow it to cool down, remove it from the pan, and serve.
