- 2.2 lbs (1 kg) of cooked and mashed cassava
- 8.8 oz (250 grams) of cooked and shredded chicken
- 1.75 oz (50 grams) of grated Parmesan cheese
- 2 tablespoons butter
- Salt, chopped green onions, and cilantro (to taste)
- Oil for frying
Instructions:
In a large bowl, combine the cooked and mashed cassava with butter and salt. Mix well until the mixture becomes smooth and homogeneous.
Add the grated Parmesan cheese, shredded chicken, chopped green onions, and cilantro.
Mix thoroughly with your hands until all the ingredients are well incorporated.
Cover the mixture with plastic wrap, pressing it against the surface of the mixture, and place it in the freezer for 10 minutes.
Remove from the freezer, take a small portion of the mixture (about 0.7 oz or 20 grams), and shape it into a small ball or the desired shape.
Repeat the process with the remaining mixture, then fry the balls in hot oil over medium heat, turning them to ensure they brown evenly on all sides.
