Recipe ingredients:
For the Batter:
- 2 cups all-purpose flour/wheat flour (8.5 oz / 240 g)
- 2 cups milk (16.2 fl oz / 480 ml)
- 2 eggs
- ½ cup vegetable oil (4 fl oz / 120 ml)
- 1 tbsp baking powder (0.42 oz / 12 g)
- Salt to taste
For the Filling:
- 2 cooked and shredded chicken breasts (about 21 oz / 600 g)
- 1 can sweet corn, drained (6 oz / 170 g)
- 1 small onion, chopped
- Salt, black pepper, oregano, paprika, parsley — to taste
- (Optional: cream cheese or sour cream for extra creaminess)
Instructions
Prepare the Batter:
In a blender, add the eggs, milk, oil, flour, and salt. Blend for 2–3 minutes until smooth. Add the baking powder and pulse quickly just to mix. Set aside.
Make the Filling:
Boil chicken breasts in salted water until cooked through.
Shred the chicken and sauté in a skillet with onions, corn, and seasonings.
Optional: Stir in a couple of tablespoons of cream cheese or sour cream for a creamier filling.
Assemble the Pie:
Preheat your oven to 356°F (180°C). Grease and flour a baking dish (approx. 12×8 inches / 30×20 cm).
Pour half the batter into the dish, then spread the chicken filling evenly.
Pour the remaining batter over the top, smoothing it with a spatula.
Optional: Brush with a beaten egg yolk for a golden finish.
Bake for 30 to 40 minutes, or until golden brown and set in the center. Let cool slightly, slice, and serve warm.
