Recipe ingredients:
🥧 Ingredients for the Batter
- 1½ cups (6.75 oz / 200 g) all-purpose flour/wheat flour
- 3 eggs
- 1 cup (8 fl oz / 240 ml) milk
- ½ cup (4 fl oz / 120 ml) vegetable oil
- 1 tablespoon (0.42 oz / 12 g) baking powder
- Salt to taste
🍗 Chicken Filling
- 2 cups (10 oz / 280 g) shredded cooked chicken
- 2 garlic cloves, minced
- 1 medium tomato, chopped
- 1 small onion, chopped
- Salt and black pepper to taste
- Chopped parsley and green onions, to taste
- Olive oil for sautéing
Instructions
Step 1 – Prepare the Batter:
In a blender, combine the eggs, milk, oil, flour, and salt. Blend until smooth and creamy.
Add the baking powder last and pulse just until mixed. Set aside.
Step 2 – Make the Chicken Filling:
In a skillet, heat a drizzle of olive oil over medium heat. Sauté the onion and garlic until golden and fragrant.
Add the shredded chicken, tomato, parsley, and green onions. Season with salt and pepper.
Cook for a few more minutes, mixing well, then remove from heat.
Step 3 – Assemble the Pie:
Preheat your oven to 350°F (180°C). Grease a 9×9-inch (23×23 cm) baking dish or similar.
Pour half of the batter into the pan and spread evenly.
Add the chicken filling on top. Pour the remaining batter over the filling and smooth out.
Step 4 – Bake and Serve:
Bake for 30–35 minutes, or until the top is golden brown and firm. Let it cool slightly before slicing and serving.
