Recipe ingredients:
- 10 eggs
- 2 cups all-purpose flour/wheat flour – 240g | 8.5 oz
- 1 cup sugar – 200g | 7 oz
Instructions:
In a stand mixer (or using a hand mixer), beat the eggs on high speed for 12 to 15 minutes, or until the mixture becomes pale, fluffy, and doubles in volume.
Lower the speed to medium and gradually add the sugar, mixing well after each addition until fully combined.
Sift the flour, then gently fold it into the egg mixture a little at a time, using a spatula or kitchen wire whisk. Use light, upward motions to keep the batter airy.
Pour the batter into a greased baking pan lined with parchment paper.
Bake in a preheated oven at 350°F (180°C) for about 30 minutes, or until golden and a toothpick inserted comes out clean.
Remove from the oven, let it cool slightly, then carefully remove from the pan.
