Instructions:
In a mixing bowl, crack the egg and lightly beat it with a fork. Add the yogurt and salt, and stir until well combined. Gradually mix in the cornstarch (or oat flour), stirring continuously until the batter is smooth.
Finally, add the baking powder and gently fold it in—just enough to incorporate. Pour the batter into a lightly greased non-stick skillet.
