Recipe ingredients:
- 50 grams (1.76 oz) of grated Parmesan cheese
- 2 cups of sugar (approx. 400 g | 14.1 oz)
- 50 grams (1.76 oz) of shredded coconut
- 1 cup of all-purpose flour/wheat flour (approx. 120 g | 4.2 oz)
- 200 ml (6.8 fl oz) of milk
- 1 bottle of coconut milk (200 ml | 6.8 fl oz)
- 4 eggs
- 2 tablespoons of butter or margarine (approx. 30 g | 1 oz)
- 1 tablespoon of baking powder (approx. 12 g | 0.42 oz)
Instructions:
Start by gathering all the listed ingredients. Then, in a blender, add the eggs, milk, coconut milk, and butter.
Blend well until the mixture is smooth and free of lumps. Next, add the flour and sugar, and blend again until fully combined.
Add the grated Parmesan cheese, shredded coconut, and baking powder. Blend briefly just to incorporate.
Pour the batter into a greased and floured baking pan.
Bake in a preheated oven at 180°C (350°F) for about 40 minutes or until golden on top.
Turn off the oven, let it cool slightly, remove from the pan, and serve.
