Recipe ingredients:
- 6 eggs (yolks and whites separated)
- 1 ½ cups (10.5 oz / 300 g) granulated sugar
- ½ cup (4.2 fl oz / 125 ml) vegetable oil
- ½ cup (4.2 fl oz / 125 ml) water
- 3 cups (13.2 oz / 375 g) all-purpose flour, sifted/wheat flour
- 1 tablespoon (0.5 oz / 15 g) baking powder
- 4 tablespoons (1.4 oz / 40 g) unsweetened cocoa powder, sifted
Instructions:
In a stand mixer, beat the egg whites until soft peaks form. Gradually add half of the sugar (about 150 g / ¾ cup) and continue whisking until firm peaks form. Set aside.
In a separate bowl, beat the egg yolks with the remaining sugar (150 g / ¾ cup) until the mixture is pale and creamy. Add the water and beat for another 1–2 minutes until foamy.
Sift the flour and baking powder together. Add them to the yolk mixture, alternating with the oil, and mix until smooth and well combined.
Using a spatula or kitchen wire whisk, gently fold the whipped egg whites into the batter, mixing from bottom to top to keep it airy.
Divide the batter into two equal parts. To one half, add the sifted cocoa powder and mix until evenly combined.
How to Assemble the Zebra Cake:
Grease and flour a 9–10 inch (24–26 cm) round cake pan. Place a large spoonful of the plain batter in the center of the pan. Then, place a spoonful of the chocolate batter directly on top of it.
Continue alternating spoonfuls of white and chocolate batter, always adding to the center, so the layers spread out in rings and create a zebra pattern.
Baking the Cake:
Preheat the oven to 350°F (180°C). Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
Remove from the oven, let it cool for a few minutes, then unmold. Slice and serve as a soft and fluffy marble-style sponge cake perfect for afternoon tea, coffee breaks, or dessert.
