Recipe ingredients:
- 6 large potatoes, cooked (about 1.2 kg | 42 oz)
- 200g diced ham (7 oz)
- 300g shredded mozzarella cheese (10.5 oz)
- 150g cream cheese or spreadable cheese (5.3 oz)
- 1 tablespoon olive oil (15 ml | 0.5 oz)
- Fresh parsley to taste
- Salt to taste
- Butter for greasing
Instructions:
In a large bowl, mash the cooked potatoes until smooth, like mashed potatoes. Add parsley, salt, and olive oil, and mix until well combined.
Grease a large skillet with butter. Spread half of the mashed potatoes evenly on the bottom, forming a base.
Add all the filling—ham, mozzarella, and cream cheese—spreading it evenly over the potato layer.
Cover with the remaining mashed potatoes, smoothing it out with a spoon until the top is nice and even.
Cook over high heat for about 7 minutes, or until the bottom is golden brown.
Carefully flip the pie onto a plate, then slide it back into the skillet to cook the other side for another 7 minutes, until golden and crispy.
Remove from the pan, slice, and serve warm.
