For the batter:

  • 2 large eggs
  • 1/2 cup sugar (3.5 oz) – (100 g)
  • 1/2 cup plain yogurt (4.2 oz) – (20 g)
  • 1 2/3 cups all-purpose flour (7 oz) – (200 g)
  • 2 teaspoons baking powder (0.35 oz) – (10 g)
  • 1 tablespoon vanilla sugar (0.35 oz) – (120 ml)
  • 1/2 cup sunflower oil (4 fl oz) – (120 g)

For the filling:

  • 1 large egg
  • 3.5 oz canned peaches, sliced (about 1/4 cup) – (100 g)
  • 3 tablespoons sliced almonds (0.7 oz) – (20 g)
  • 3.5 oz (1/2 cup) mascarpone cheese (or good-quality cream cheese) – ()
  • 2 tablespoons sugar (1 oz)

Instructions:

Before you start, preheat the oven to 180 °C (356 °F).
Grease a cake tin with butter and set aside.

Step 2: Prepare the dough
In a large bowl, beat the eggs, sugar and vanilla sugar until the mixture is light and fluffy.
Stir in the sunflower oil and natural yogurt.
Gradually sift in the flour and baking powder, stirring gently to maintain the structure of the dough.

Step 3: Assembling the cake
Pour the batter into the prepared glass dish.

Step 4: Prepare the filling
In a separate bowl, mix the mascarpone cheese, sugar and one egg, stirring until creamy.
Spread this mixture evenly over the cake batter on the baking sheet.

Step 6: Bake the cake
