Recipe Ingredients:
- 2 eggs
- 1/4 cup of sugar (2.1 oz) – (60 g)
- 1/4 cup of milk (1.7 fl oz) – (50ml)
- 2/3 cup of butter (5 oz) – (140 g)
- 1 tablespoon of baking powder (0.5 oz) – (15 g)
- 3 cups of flour (13.4 oz) – (300 g)
- a pinch of salt and vanilla
Instructions:
First, pour the warm milk into a bowl. Now add the yeast and a teaspoon of the total sugar. Mix and leave to stand for about 10 minutes.
Then, using another bowl, beat the softened butter with the rest of the sugar, the salt and the vanilla sugar. Now use a mixer on medium speed for 3–4 minutes until you get a light, homogeneous mixture.
Then add one egg at a time, at room temperature, beating well with each addition. Gradually add the flour, previously sifted.
Then knead the dough, first with a spatula and then with your hands, until it’s soft and doesn’t stick. Roll out the dough with a rolling pin, forming a rectangle about 1 cm thick.
Sprinkle the surface with icing sugar. Then cut the dough into equal rectangles using a pizza cutter and place them on a baking sheet lined with baking paper.
Finally, cover the cookies with aluminum foil and leave to rest for 15 to 20 minutes. Then bake in a preheated oven at 356 °F or 180 °C. After baking, allow to cool before serving.
