Recipe ingredients:
Cookie Dough:
- 1 large egg
- 2 cups all-purpose flour/wheat flour (about 240 g | 8.5 oz)
- 1 cup sugar (about 200 g | 7 oz)
- 2 cups cornstarch (about 250 g | 8.8 oz)
- 250 g unsalted butter at room temperature (8.8 oz | ~2 sticks + 2 tbsp)
- 1 teaspoon vanilla extract
Filling:
- 200 g guava paste (7 oz), softened or mashed into a spreadable consistency
Instructions:
In a large bowl, lightly beat the egg. Add butter, sugar, and vanilla extract. Mix until creamy.
Stir in the cornstarch. Then gradually mix in the flour, kneading gently with your hands until the dough is smooth and no longer sticky.
Wrap the dough in plastic wrap and refrigerate for 15 minutes to firm up for easier handling.
Remove small portions of dough, shape into small discs or balls, and flatten slightly. Place on a greased or parchment-lined baking tray.
Preheat the oven to 180°C (350°F) and bake the cookies for about 20 minutes, or until the bottoms are lightly golden.
Let the cookies cool completely before removing from the tray.
Filling:
Now, mash the guava paste well until it forms a smooth spread. Add a spoonful of the filling between two cookies to make sandwiches, then place them in the microwave.
Finally, heat for about 20 seconds, remove carefully, and they’re ready to serve.
