How to Make Homemade Oat Cake

Recipe Ingredients:
- 2 eggs
- 1 ¼ cups of rolled oats (120g)
- ¾ cup of skim milk or plant-based milk (200ml)
- 2 ripe bananas
- 3 tablespoons of cocoa powder
- 1 teaspoon of vanilla extract
- 1 teaspoon of baking powder (such as Royal)
- Chopped walnuts, cashews, or peanuts
- Melted 70% dark chocolate for topping (optional)
Instructions:
First, in a bowl, mix the oats with the milk and let it rest for about 10 minutes.
Meanwhile, mash the bananas with a fork and set aside.
Next, in another bowl, whisk the eggs with a fork, add the vanilla extract and the mashed bananas, mixing well until smooth.
After that, add the cocoa powder and stir until fully incorporated.
Then, add the soaked oats and mix until you have a uniform batter. Lastly, add the baking powder and mix gently.
Pour the batter into a greased glass baking dish, smooth the surface, and spread the chopped nuts (or cashews or peanuts) on top.
Bake in a preheated oven at 356 °F (180 °C) for about 40 minutes. After baking, finish with melted 70% cocoa chocolate drizzled on top, if desired.
