Meal Prep: Homemade Pastry Dough

Learn a Dessert Without Dairy and Without Gelatin. You don’t need cooking classes or costly meal delivery services to prepare something delicious at home.

Recipe ingredients:

  • 200 grams (7 oz) of heavy cream
  • 2 ½ cups of all-purpose flour/wheat flour (about 300 grams / 10.6 oz)
  • Salt to taste (optional)
  • Filling with cheese, ham, ground meat or others

Instructions:

Start by placing the heavy cream and flour in a mixing bowl (add a pinch of salt if desired).

Mix everything with your hands until the dough becomes smooth and no longer sticks to your fingers.

If needed, add a bit more flour until you reach the ideal consistency. Then place the dough in a plastic bag and let it rest in the fridge for about 20 minutes.

On a floured surface, roll the dough out with a rolling pin until it’s very thin. Use a knife or pastry cutter to cut the dough into your desired shapes. Add your favorite filling.

Fold the dough over the filling and press the edges with a fork to seal.

To finish, heat oil in a pan and fry the pastries until golden and crispy.

Tips:

  • Chilling the dough helps firm it up, making it easier to handle.
  • For a healthier version, brush the pastries with egg yolk and bake in a preheated oven at 180°C (350°F) until golden brown.
  • This dough is versatile — it works great with both sweet and savory fillings. Try different combinations!
