How to Make Mosaic Gelatin

Recipe Ingredients:
- 4 packets of flavored gelatin (any flavor of your choice)
- 1 tablespoon unflavored gelatin (0.35 oz / 10g)
- 1 can of sweetened condensed milk (13.9 oz / 395g)
- 1 can of table cream or heavy cream (approx. 6.8 fl oz / 200g)
- 5 tablespoons water (2.5 fl oz / 75ml)
Instructions:
First, prepare the four flavors of gelatin using only half the amount of water recommended by the manufacturer. Pour each flavor into containers of the same size and place them in the refrigerator until set.
Next, hydrate 10 g (or 1 tablespoon) of unflavored, colorless gelatin in 5 tablespoons of water. Set it aside.
Then, once the gelatin has set, cut it into small cubes (julienne style) and place them in a large bowl. If you prefer, return the bowl to the refrigerator to prevent the cubes from melting.
After that, in the blender jar, add the sweetened condensed milk and the heavy cream. Melt the hydrated gelatin using a double boiler (bain-marie).
Then, with the blender running, pour the melted gelatin into the center of the jar and blend until well combined.
Afterward, pour this mixture over the gelatin cubes in the bowl and stir quickly to combine everything.
Next, transfer the mixture to a glass dish lightly greased with a thin layer of oil.
Finally, refrigerate for at least 4 hours, or until fully set.
