Oat, Apple, and Carrot Cake: Easy recipe with few ingredients and very tasty

How to Make Oat, Apple, and Carrot Cake

Oat, apple, and carrot cake: light, nutritious, and perfect any time of day. A simple recipe that wins hearts and is always worth making again. You don’t need cooking classes or costly meal delivery services to prepare something delicious at home. With a bit of planning and our detailed meal prep guide, you can create amazing dishes with confidence and ease.

Recipe Ingredients:

  • 3 eggs
  • 2 medium apples, peeled and chopped
  • 2 medium carrots, grated
  • 1/2 cup coconut oil or vegetable oil (4 fl oz / 120ml)
  • 1 cup brown sugar (7 oz / 200g)
  • 2 cups oat flour (about 6.7 oz / 190g)
  • 1 tablespoon baking powder (0.4 oz / 12g)
  • 1/2 cup raisins or chopped walnuts (optional) (2 oz / 60g)
  • 1 teaspoon ground cinnamon (optional) (0.1 oz / 3g)

Instructions:

First, add the eggs, oil, brown sugar, and chopped apples to a blender. Blend until smooth and well combined.

Next, in a large bowl, mix together the oat flour, ground cinnamon, and baking powder.

Then, pour the blended mixture into the bowl with the dry ingredients and stir until everything is fully incorporated.

After that, fold in the grated carrot. If desired, add raisins or chopped nuts for extra flavor and texture.

Now, grease and flour a baking dish and pour the batter into it.

Following this, bake in a preheated oven at 356 °F (180 °C) for about 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.

Lastly, allow the cake to cool completely before removing it from the dish.

To finish, serve it with your favorite coffee or tea.

Extra Tip: For an even more nutritious cake, you can replace the sugar with honey or a natural sweetener. For a special touch, sprinkle shredded coconut over the top before baking.
