- 3 medium-sized carrots (peeled and sliced)
- 3 eggs
- 1 cup all-purpose flour
- 2 cups sugar
- 2 cups cornmeal
- 1 cup soybean oil
- 1 tablespoon baking powder
Instructions:
In a blender, combine carrots, eggs, and oil. Blend for a few minutes until it forms a creamy mixture.
In a separate bowl, add the dry ingredients: flour, sugar, cornmeal, and baking powder. Mix the creamy mixture with the dry ingredients until everything is well incorporated.
Transfer the batter to a greased baking pan. Bake in a preheated oven at 180ºC (350ºF) for approximately 30 minutes.
