Recipe Ingredients:
For the Caramelized Pineapple:
- ½ cup of water
- 1 cup of sugar
- Pineapple slices, as needed
For the Cake:
- 2 ½ cups of all-purpose flour (wheat flour)
- 1 cup of sugar
- ½ cup of oil
- 6.8 oz of milk (200 ml)
- 1 tablespoon of baking powder
- 3 eggs
Instructions:
For the Caramelized Pineapple:
In a saucepan, add the sugar and melt over low heat until it turns into a golden syrup.
Carefully add the water, let it boil, and stir until all the sugar lumps dissolve, forming a shiny caramel.
Caramelize the bottom and sides of a 9-inch (23 cm) round tube pan. Let it cool slightly, then arrange the pineapple slices on the bottom and sides of the pan.
For the Cake:
In a mixing bowl, combine the eggs and sugar. Beat well with a whisk for about 3 minutes until you have a pale, creamy mixture.
Add the oil, milk, and flour, and mix until everything is well incorporated. Gently fold in the baking powder.
Pour this batter into the caramelized pan with the pineapple slices, then bake in a preheated oven at 350°F (180°C) for about 35 to 40 minutes.
Once baked, remove the cake from the oven and immediately turn it out while still warm to prevent the caramel from sticking.
