How to Make Soft Homemade Bread

Recipe Ingredients:

  • 3 eggs
  • 2 tablespoons of sugar
  • ½ tablespoon of salt (or 1 heaping teaspoon)
  • 1 cup (5.3 ounces or 150 grams) of fine cornmeal or corn flour
  • 1 ½ cups (5.8 ounces or 165 grams) of sweet cassava starch
  • Approximately ½ cup (4.7 ounces or 140 ml) of warm water
  • 1 tablespoon of dry yeast (or 0.35 ounces or 10 grams)
  • 2 tablespoons of powdered milk
  • 1 teaspoon of xanthan gum
  • 3 tablespoons of oil (or olive oil)

Instructions:

Preparation of Liquid Ingredients:
First, in a bowl, beat the eggs with the sugar and salt until well combined.

Adding Dry Ingredients:
Then, add the cornmeal, sweet starch, powdered milk, xanthan gum, and dry yeast. Mix well until all ingredients are fully incorporated.

Adjusting Consistency with Warm Water:
Next, slightly warm the water (it doesn’t need to be hot) and gradually add it to the mixture while stirring until the batter reaches a consistency slightly thicker than cake batter.

Adding the Fat:
After that, incorporate the oil or olive oil, mixing well until fully blended into the dough.

Preparation for Baking:
Then, grease a loaf pan with oil and pour in the batter. Let it rest in a warm, closed space for about 30 minutes to rise.

Baking:
Afterward, preheat the oven to 356 °F (180 °C). Bake for about 40 minutes, starting at 356 °F (180 °C) and increasing to 392 °F (200 °C) halfway through.

Final Touch:
Finally, remove the bread from the oven and take it out of the pan. To finish, for a glossy effect, spread a little butter over the warm surface.
