How to Make Delicious Homemade Dessert

Recipe Ingredients:
- 3 eggs (about 2 oz / 57g each)
- 300ml milk (10.1 fl oz)
- 200g all-purpose flour (7 oz)
- 3 small potatoes
- 1 chopped onion
- 1 grated carrot (peeled)
- 1 chopped red bell pepper
- 1 pinch of salt
- Vegetable oil
- 2 teaspoons baking powder (such as Royal) (0.3 oz / 8g)
- Chopped fresh herbs (parsley, green onion, or cilantro, to taste)
- 150g shredded mozzarella or fresh Parmesan cheese (5.3 oz)
Instructions:
First, peel the potatoes, grate them, and place them in a bowl. Then, cover with water and let them rest for a few minutes.
Meanwhile, chop the onion and sauté it in a tablespoon of oil until soft.
Next, add the grated carrot and chopped bell pepper, stirring well. Let it cook for a few more minutes and set aside.
After that, in another bowl, beat the eggs with a pinch of salt until you get a homogeneous mixture. Then, add the milk and mix gently.
Soon after, add the flour and baking powder, stirring until you achieve a uniform batter. Let the mixture rest for 15 minutes.
Finally, drain the water from the potatoes and add them to the batter. Add the chopped parsley and the sautéed ingredients, mixing well to incorporate everything.
Grease a baking dish with oil and pour the batter into it. Then, place it in a preheated oven at 392 °F (200 °C) and bake for 45 minutes.
Lastly, sprinkle the grated cheese on top and return it to the oven for another 15 minutes, until it is golden and gratinated.
To finish, remove from the oven and serve hot, either as a main dish or a side.
