How to Make Egg-Free Homemade Cookies

Sugar-free cookie recipe made with apples and no eggs. Apples are rich in fiber and antioxidants, while raisins add natural sweetness and minerals. See below the list of all ingredients and required quantities. And then, a very complete preparation method with details of the recipe.

Recipe Ingredients:

  • 2 grated apples
  • 2 tablespoons of lemon juice
  • 2.8 ounces of wheat semolina (80 grams)
  • 3.5 ounces of raisins (100 grams)
  • ½ cup of vegetable oil
  • 4.6 ounces of rice flour (130 grams)
  • 1 teaspoon of baking powder (e.g., Royal)

Note:
Semolina is a type of special wheat flour that contains fewer fibers than regular wheat flour and has a lighter color.
Its main distinguishing feature is its firmer consistency and coarse, grainy texture, setting it apart from other types of flour.

Instructions:

First, peel the apples and grate them finely. Place them in a bowl and add the lemon juice, followed by the semolina. Mix well until you get a homogeneous texture. Then, incorporate the raisins and stir again to evenly distribute the ingredients.

Next, cover the bowl with plastic wrap and refrigerate for about an hour to allow the semolina to swell.

After that, add the vegetable oil, sifted flour, and baking powder. Carefully mix everything until you have a firm and uniform dough.

Then, line a baking tray with parchment paper and spread the dough over it. Shape it as desired and cut it into pieces before baking.

Finally, preheat the oven to 356 °F (180 °C) and bake for about 40 minutes, or until the pieces are golden brown. To finish, remove from the oven, let them cool, and serve as desired.
