Meal Prep: Codfish Cakes

Codfish cakes with mayonnaise are perfect.. You don’t need cooking classes or costly meal delivery services to prepare something delicious at home. 

Recipe ingredients:

  • 300 g (about 10.5 oz) of desalted and shredded codfish
  • 3 cups of cooked and mashed potatoes
  • 1 tablespoon of all-purpose flour/wheat flour
  • Salt to taste
  • Black pepper to taste
  • 3 eggs
  • 2 tablespoons of chopped cilantro and green onions
  • Oil for frying

Instructions:

In a large bowl, combine the shredded codfish, mashed potatoes, flour, salt, black pepper, eggs, and chopped herbs. Stir well until the mixture is smooth and consistent.

Using a tablespoon, scoop portions of the mixture and shape them into small fritters. Place them on a floured surface to prevent sticking.

Heat oil in a deep pan over medium heat. Fry the fritters in hot oil until golden brown and crispy on the outside. Remove with a slotted spoon and place on paper towels to drain excess oil.

Serve the codfish fritters hot, accompanied by mayonnaise or your favorite dipping sauces.
