How to Make Homemade 5-Cup Cookies

Simple and delicious, the 5-Cup Cookie is a tradition in our home and can be in yours too. See below the list of all ingredients and required quantities. And then, a very complete preparation method with details of the recipe.

Recipe Ingredients:

  • 1 egg (about 2 oz / 57g)
  • 1 cup grated Parmesan cheese + grated Minas cheese (2.5 oz / 70g)
  • 1 cup sweet starch (tapioca starch) (3.5 oz / 100g)
  • 1 cup all-purpose flour (3.9 oz / 110g)
  • 1 tablespoon baking powder (0.53 oz / 15g)
  • 1 cup sugar (5.3 oz / 150g)
  • ½ cup melted butter or margarine (3 fl oz / 90ml)
  • Crystal sugar to taste

Instructions:

First, in a bowl, mix the egg, sugar, and melted butter using a wooden spoon until you get a homogeneous mixture. Then, add the all-purpose flour, sweet starch, and grated cheeses, stirring gently. Next, add the baking powder and mix a little more until the dough gains consistency to be handled by hand.

The ideal point is when the dough is smooth, homogeneous, and slightly sticky to the fingers. If it is too soft, adjust the texture by adding small amounts of flour and starch. After that, with hands lightly greased with oil, take small portions of the dough, shape them into an oval form, and use the back of a knife to create diagonal lines on the surface. Soon after, coat the top with crystal sugar for a crunchy finish.

Finally, place the cookies on a greased and floured baking sheet, leaving some space between them. Bake in a preheated oven at 356 °F (180 °C) for approximately 15 to 20 minutes, or until the edges are lightly golden. Lastly, remove from the oven, transfer to a cooling rack, and let them cool completely before serving.
