First, in a large pot, heat the milk over medium heat until it starts to boil. Stir occasionally to prevent it from sticking to the bottom of the pot.
Once the milk reaches a boil, turn off the heat. Then, gradually add the white vinegar while stirring continuously. You’ll notice the milk curdling, separating into solid pieces (curds) and liquid (whey).
Next, using a slotted spoon or strainer, gently remove the curds from the pot and transfer them to a bowl. If you prefer firmer cheese, press the curds with your hands or wrap them in a clean cloth to remove excess whey.
After that, season the curds with salt to taste and mix well. For a creamier cheese, add heavy cream and stir until smooth.
Then, place the curds into a mold lined with a clean, damp cloth, pressing firmly to shape the cheese. You can use a round, square, or any other mold of your choice.
Finally, refrigerate the cheese for at least 2 hours to firm up. To finish, carefully remove the cheese from the mold and serve as desired.
