- 4 eggs
- 200 g (7 oz) chilled heavy cream
- 1 tablespoon chopped parsley
- 1 tablespoon chopped green onion
- 1 garlic clove
- Salt to taste
- Juice of ½ lemon (optional)
Instructions:
Start by placing the eggs in a small saucepan, covering them with water, and bringing to a boil. Cook until the eggs are hard-boiled.
Peel the eggs, cut them into chunks, and place them in a blender along with the chilled cream and the garlic.
Blend until the mixture is smooth and creamy. Add lemon juice (if using), salt, parsley, and green onion. Blend again until well combined.
Transfer the mayonnaise to a bowl and serve as a dip, sandwich spread, or a topping for burgers, fries, or salads.
