Recipe Ingredients:

For the Dough:

  • 14 oz (200 g) unsalted butter
  • 2 large eggs
  • 4 cups (17.6 oz / 500 g) all-purpose flour
  • ½ cup (3.4 fl oz / 100 ml) room-temperature water
  • ½ tablespoon salt

For the Filling:

  • 1 medium onion, chopped
  • 1.1 lbs (500 g) desalted, shredded codfish
  • 5.3 oz (150 g) sliced olives
  • 3 ripe tomatoes, seeded and chopped
  • Chopped parsley and green onions to taste

For the Creamy Topping:

  • 3 large eggs
  • 2 cups (14 oz / 400 g) heavy cream or table cream
  • 2 cups (16 oz / 450 g) creamy cream cheese
  • 7 oz (200 g) grated cheese (prepackaged)
  • Salt to taste

Instructions:

Preparing the Dough:
First, in a large bowl, combine the butter, eggs, water, and salt.

Then, gradually add the flour, mixing gently until a smooth dough forms. Avoid over-kneading the dough.

Afterward, shape the dough into a ball, cover it with a clean cloth, and let it rest for a few minutes.

Next, roll the dough directly into a 12×8-inch (30×20 cm) rectangular glass baking dish or a round pan with a removable bottom, pressing it up the sides with your hands.

Set aside while you prepare the filling.

Preparing the Filling:
First, heat a skillet and sauté the onion until translucent.

Then, add the tomatoes and cook until softened.

Next, stir in the desalted, shredded codfish and sliced olives.

After that, finish with chopped parsley and green onions. Allow the filling to cool before using.

Preparing the Creamy Topping:
In a medium bowl, combine the heavy cream, eggs, cream cheese, and a pinch of salt.

Then, whisk the mixture with a fork or whisk until smooth.

Afterward, gradually add the grated cheese, mixing well.

Assembling the Dish:
Begin by spreading the codfish filling evenly over the prepared dough.

Then, pour the creamy topping over the filling, spreading it evenly to cover the entire surface.

Baking:
Bake in a preheated oven at 356 ºF (180 ºC) for approximately 35 minutes, or until the topping is firm and golden.

Finishing and Tips:

  • Allow the pie to cool slightly before removing it from the pan.
  • For an elegant presentation, use pans with removable bottoms.
  • Finally, serve with a dash of pepper for added flavor.
