Recipe Ingredients:

  • 1 cup of water (8 fl oz)
  • 4.4 lbs of cooked sweet potatoes – (2 kg)
  • 2 cups of sugar (8.8 oz each) – (500 ml)
  • 3 packets of unflavored powdered gelatin (0.85 oz each) – (72 g)
  • 1 tablespoon of vanilla extract (optional)
  • Yellow food coloring (optional)
  • Oil for greasing the molds

Instructions:

Prepare the Sweet Potato Purée: First, cook the sweet potatoes until they are very soft. Then, blend them in a blender or food processor until smooth and uniform. Set aside.

Make the Caramel Syrup: Next, melt the sugar in a medium saucepan over medium heat, stirring occasionally, until it turns golden brown. After that, gradually add the water, stirring constantly, until the syrup becomes smooth.

Combine the Mixture: Afterward, add the sweet potato purée to the syrup and mix well. Then, incorporate the remaining sugar, stirring until fully combined. Hydrate the gelatin in 1/2 cup (120 ml) of water, and then add it to the mixture, stirring until completely dissolved.

Cook and Adjust: Cook over medium heat, stirring occasionally, until it begins to bubble. Once it reaches a boil, let it cook for an additional 5 minutes. After that, add the vanilla extract and food coloring if you’d like a pop of color.

Shape and Chill: Lightly grease glass dishes with a thin layer of oil and pour in the mixture. Allow it to cool completely before placing it in the refrigerator. Chill for at least 4 hours.

Finish: Finally, carefully remove the dessert from the molds, cut it into pieces of your desired size, and serve.
