Recipe Ingredients:

  • 3 eggs
  • 1 cup cornstarch
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 can (about 7 ounces) of corn, drained
  • ¾ cup oil
  • Grated Parmesan cheese, to taste
  • Salt, to taste
  • Dried seasonings, to taste
  • 1 tablespoon baking powder
  • Cooked and shredded chicken, to taste
  • Tomato, hearts of palm, and olives, to taste
  • Fresh parsley, to taste

Instructions:

First, put the drained corn and milk in a blender, and blend until fully ground.

Next, add the eggs and oil and blend until smooth and well combined.

In a separate bowl, sift the flour, cornstarch, and baking powder. Then, add the blender mixture to the bowl and mix thoroughly with a whisk until everything is well incorporated.

Then, add the salt, dried seasoning, grated Parmesan cheese, cooked and shredded chicken, chopped tomatoes, heart of palm, olives, and chopped parsley.

Mix everything carefully to combine all ingredients.

After that, pour the batter into a round 9-inch (22 cm) pan, previously greased and floured.

Top with chopped tomatoes, parsley, chopped olives, and grated Parmesan cheese.

Finally, bake in a preheated oven at 356 ºF (180 ºC) for about 40-45 minutes.

Remove from the oven and enjoy this delicious savory corn cake!
