Recipe Ingredients:

  • 4 egg whites
  • 4 egg yolks
  • 4 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 3 Greek yogurts (4.4 ounces each)
  • 2 tablespoons sugar (additional)
  • 4 tablespoons cornstarch (optional, can substitute with all-purpose flour)
  • 1 large apple, grated
  • Zest of one lemon
  • Juice of half a lemon

Instructions:

Preparing the Yolks:
First, in a bowl, beat the egg yolks with 4 tablespoons of sugar until the mixture doubles in volume and becomes creamy and pale. Then, add the vanilla extract and lemon zest, mixing well.

Perfect Meringue:
Next, in a separate bowl, beat the egg whites to stiff peaks. After that, add the juice of half a lemon and 2 additional tablespoons of sugar, continuing to beat until firm peaks form.

Mixing the Ingredients:
Afterward, if using cornstarch, mix it into the yolks until fully dissolved. Then, gently fold the meringue and yogurt into the yolk mixture using a spatula to maintain the airiness.

Adding the Apple:
Next, grate the apple and gently fold it into the batter.

Preparing for Baking:
Preheat the oven to 356 °F (180 °C). Grease an 8×8-inch (20×20 cm) glass baking dish and line it with parchment paper. Pour the batter into the dish, smoothing the top with a spatula. Tap the dish lightly on the counter to remove air bubbles.

Baking Time:
Then, bake in the preheated oven for about 40 minutes, or until a toothpick inserted in the center comes out clean.
