Recipe Ingredients:
- 4 eggs (about 2 oz / 57g each)
- 1 cup water (8.1 fl oz / 240ml)
- 500g sweet starch (or sour starch, if preferred) (17.6 oz / 1.1 lbs)
- 200ml vegetable oil (6.8 fl oz) (can be reduced to 120ml / 4 fl oz if preferred)
- 1 cup milk (8.1 fl oz / 240ml)
- 1 teaspoon salt (adjust according to the type of cheese)
- 300g grated cheese (Minas, Canastra meia-cura, Colonial, Mozzarella, or another of your choice) (10.6 oz)
Necessary Utensils:
- Medium saucepan
- Large mixing bowl
- Spatula
- Baking sheets (two of varying sizes)
- Preheated oven at 180°C (356°F)
- Kitchen scale (optional, to standardize the size of the dough balls)
Instructions:
Preparation of the Scalding Liquid: First, in a medium-sized pan, add the water, oil, and milk. Heat over medium heat until it starts to boil. As soon as it reaches boiling point, turn off the heat immediately to prevent overflow.
Scalding the Starch: Then, place the starch in a large bowl. Next, carefully pour the boiling mixture over it, stirring continuously with a spatula until the liquid is fully absorbed. After that, let the mixture cool for about 10 to 15 minutes.
Adding Eggs and Salt: Afterward, add the eggs one by one to the cooled dough, mixing well until a uniform consistency is achieved. Soon after, add the salt and continue mixing until fully incorporated.
Incorporating the Cheese: Finally, add the grated cheese to the dough and knead with your hands for about 5 minutes, ensuring the cheese is well distributed.
Preparing for Shaping: To make shaping easier, lightly grease your hands with oil.
Shaping the Cheese Breads: Lastly, form small balls of approximately 40 g each. Arrange them on a baking sheet, leaving enough space between them to prevent sticking during baking.
Baking: Finishing up, place in a preheated oven at 356 °F (180 °C) and bake for about 35 to 40 minutes, or until golden brown. Baking time may vary depending on the oven used.
Finalizing: Remove the cheese breads from the oven and wait a few minutes to cool before serving. They can be enjoyed while still warm or at room temperature.
Yield: This recipe yields approximately 36 cheese breads, each weighing 40 g.
Additional Tips:
- Dough Consistency: The dough may feel sticky, which is normal and helps ensure the ideal texture of the cheese bread.
- Variety of Cheeses: Try using different types of cheese to vary the flavor. Adjust the amount of salt if necessary.
- Reduced Oil Version: For a less oily version, reduce the amount of oil while maintaining the quality and flavor of the recipe.
