How to Make Codfish Cakes

Recipe Ingredients:

  • 2 eggs
  • Black pepper to taste
  • 1 chopped onion
  • 1.1 pounds (500 grams) of desalted, shredded codfish
  • 1.1 pounds (500 grams) of boiled and mashed potatoes
  • Salt to taste
  • Oil for frying
  • Parsley and green onions to taste

Instructions:

We’ll start by mixing the shredded cod and the mashed potatoes in a large bowl.
Add the eggs, chopped onion, parsley, chives, black pepper and salt.

Then stir well until all the ingredients are completely incorporated, forming a uniform dough.
Shape into small dumplings with your hands and set aside.

Then, using a pan, heat the oil over medium-high heat.

Then fry the dumplings in the hot oil until they are golden brown on all sides.

Finally, remove the dumplings with a slotted spoon and let them drain on absorbent paper to remove the excess oil. Serve the dumplings hot and enjoy.
