Recipe Ingredients:

  • 3 eggs
  • ¾ cup (7 fl oz / 200ml) coconut milk
  • 7 tbsp (3.5 oz / 100g) melted butter
  • 2.2 lbs (1 kg) grated cassava
  • 2 cups (14 oz / 400g) sugar
  • 1 cup (8 fl oz / 240ml) milk
  • 1 tbsp (0.4 oz / 12g) baking powder
  • A pinch of salt

Instructions:

Step 1: Preparing the Batter – First, preheat the oven to 356 °F (180 °C). Then, grate the cassava and set it aside. In a large bowl, beat the eggs with the sugar until you get a light and fluffy mixture. Next, add the melted butter and continue beating until well combined.

Step 2: Mixing the Ingredients – After that, add the coconut milk, regular milk, and salt, stirring well to ensure everything is well mixed. Then, gradually add the grated cassava, stirring until you get a smooth batter. Lastly, gently fold in the baking powder.

Step 3: Baking the Cake – Grease a baking pan of your choice and pour in the batter. Afterward, place it in the preheated oven and bake for about 50 minutes, or until the cake is golden and firm to the touch. Next, check for doneness using a toothpick: if it comes out clean, the cake is ready. Finally, remove it from the oven and let it cool before serving.
