Recipe Ingredients:

  • 2 cups of whole milk (500 ml)
  • 7 tablespoons of cornstarch (about 3.5 oz) – (100g)
  • 7 tablespoons of butter (about 3.5 oz) – – (100g)
  • ½ cup of grated Parmesan cheese (about 1.75 oz) – (50g)
  • 1 teaspoon of salt

Instructions:

First, dissolve the cornstarch in a small portion of the 2 cups of milk, stirring well until smooth.

Then, in a saucepan, combine the remaining milk with the cornstarch mixture. Add the butter, grated Parmesan cheese, and a pinch of salt.

Cooking:

Next, place the saucepan over medium heat, stirring constantly to prevent lumps. Continue stirring until the mixture thickens and starts to pull away from the sides of the pan, forming a smooth and consistent dough.

Transferring to the Dish:

Once the mixture is thick and pulling away from the pan, remove it from the heat. Pour it into an appropriate dish and smooth the surface with a spatula.

Finally, let it cool completely, then refrigerate for 3 to 5 hours to set.

Serving:

Once firm, unmold and cut the cheese as desired. Serve with bread, crackers, or use it in other recipes that call for a creamy and flavorful cheese.
