How to Make Homemade Christmas cake

The Christmas cake is a highlight of holiday celebrations. With its rich flavor and soft texture, it’s sure to impress everyone. Prepare this treat and make your festivities even more special. Recipe Ingredients:

  • 5 egg yolks
  • 5 egg whites
  • 1 ½ cups granulated sugar
  • 1 cup milk
  • 2 ½ cups all-purpose flour
  • ½ cup raisins
  • ½ cup candied fruits
  • 5 tablespoons butter or margarine
  • 4 tablespoons rum
  • 1 tablespoon baking powder
  • 1 teaspoon panettone or orange essence
  • 1 teaspoon vanilla extract

For the topping:

  • 3 tablespoons milk
  • 1 cup powdered sugar

Instructions:

Cake Preparation:
First, place the egg whites in a bowl and beat them until they reach stiff peaks. Set aside.

Next, in a stand mixer, add the egg yolks, sugar, panettone or orange essence, and vanilla extract. Beat the mixture well until it becomes light and fluffy. Then, add the butter or margarine and mix again until fully incorporated.

After that, gradually add the all-purpose flour, alternating with the milk, and mix well after each addition to achieve a smooth batter. Then, fold in the candied fruits, raisins, and baking powder using a whisk. Lastly, gently fold in the beaten egg whites to maintain the batter’s light texture.

Pour the mixture into a 10-inch (26 cm) tube pan, greased and floured. Bake in a preheated oven at 356 °F (180 °C) for about 40 to 45 minutes. Once baked, remove from the oven, let it cool slightly, and carefully transfer it to a glass dish.

For the Icing:
First, in a small bowl, combine the powdered sugar with the milk, adding it gradually while stirring until you get a creamy but slightly runny consistency. Avoid adding all the milk at once; adjust the amount as needed.

Then, microwave the mixture for about 20 seconds to make it smoother. Immediately pour the icing over the cake to prevent it from hardening.
