Recipe Ingredients:

  • 2 whole eggs
  • 3 tablespoons olive oil (1.5 fl oz / 45ml)
  • 3/4 cup water (6.8 fl oz / 200ml)
  • 2 cups sweet or sour tapioca starch (about 8.5 oz / 240g)
  • 1 tablespoon salt (0.5 oz / 15g)

Instructions:

First, add the olive oil, water, and salt to a saucepan and bring it to a boil. Then, place the tapioca starch (sweet starch) in a bowl. Next, pour the boiling mixture from the pan over the starch to scald it.

After that, mix well until everything is fully incorporated. Then, add the eggs one at a time, mixing thoroughly after each addition, until the dough is sticky but firm — not too runny.

If needed, add one more egg and mix with your hands until the dough reaches the ideal consistency. Next, with your hands greased with oil, shape small portions of the dough into balls or sticks.

Afterwards, place the shaped pieces onto the preheated and greased air fryer basket. Then, bake at 356 °F (180 °C) for 8 to 15 minutes, depending on how golden you want your biscuits to be.
