How to Make Flourless Ricotta Pie Recipe

Recipe Ingredients:

For the Base:

  • 2 tablespoons oil (1 oz / 30ml)
  • 1/2 cup skim ricotta cheese (4.2 oz / 120g)
  • 2 cups powdered milk (can be plant-based) (7 oz / 200g)
  • Sweetener (such as stevia) to taste
  • Ice-cold water to taste

For the Filling:

  • 500 grams fresh ricotta cheese (17.6 oz / 1.1 lbs)
  • 2 eggs (about 2 oz / 57g each)
  • 2 tablespoons sweetener of your choice (such as stevia)
  • 3 tablespoons low-fat cheese (1.5 oz / 42g)
  • 1 tablespoon vanilla extract (0.5 fl oz / 15ml)
  • Zest of one orange

Instructions:

Crust:

First, in a bowl, mix the ricotta with powdered milk and the sweetener of your choice.

Then, add the oil and stir well. Next, gradually add the cold water, just enough to form a pasty dough. Use a spoon to avoid adding too much water.

After that, grease a removable-bottom pan with cooking spray or a little oil.

Next, spread the mixture evenly in the pan, smoothing it out to form a uniform base. Finally, place it in the refrigerator to rest while you prepare the filling.

Filling:

First, in another bowl, mix the remaining ricotta with the low-fat cheese. Then, add the orange zest and vanilla extract.

Next, incorporate the previously beaten eggs with the sweetener to taste.

After that, pour the mixture over the crust in the pan and bake in a preheated oven at 356 °F (180 °C) for approximately 1 hour. Baking time may vary depending on your oven.

Then, do the toothpick test to check if the cake is ready. If necessary, bake for a few more minutes.

Afterward, turn off the oven and let the cake cool inside it.

Finally, remove from the pan and, if desired, sprinkle powdered sugar on top.

Tips and Advice:

  • To make the crust firmer, consider adding 2 tablespoons of cornstarch to the mixture.
  • Buying ricotta from specialized stores can be more cost-effective.
  • Make sure to drain the ricotta well to prevent the cake from becoming watery. Place it in a kitchen towel, wrap it like a bundle, and press to remove excess liquid.
  • Once ready, store the ricotta cake in the refrigerator. Chilling enhances its flavor, making it an irresistible dessert.
