How to Make Spinach with potatoes Grandma’s recipe

A simple recipe that blends roasted potatoes, creamy spinach, and gratinated cheese, delivering a dish that’s both easy and flavorful. See below the list of all ingredients and required quantities. And then, a very complete preparation method with details of the recipe.

Recipe Ingredients:

  • 1 pound (16 oz) of russet potatoes – (500 g)
  • 1 ¾ cups whole milk – (400ml)
  • 3 ½ ounces (about 1 cup) shredded mozzarella cheese – (100 g)
  • 1 bunch of fresh spinach
  • 1 tablespoon unsalted butter
  • 1 medium red onion, finely chopped
  • 1 clove garlic, minced
  • 2 green onion stalks, sliced
  • 1 small red bell pepper, diced
  • 3 tablespoons all-purpose flour
  • Extra-virgin olive oil to drizzle over the potatoes
  • Salt, black pepper, and ground nutmeg to taste

Suggestion: If you prefer, substitute fresh spinach with 1 pound (16 oz) of frozen spinach. – (500 g)

Instructions:

First, slice the potatoes into rounds and place them in a glass baking dish. Season with salt and black pepper to taste, then drizzle with extra-virgin olive oil. Toss well to coat the potatoes evenly.

Next, arrange the potato slices in an even layer in the dish. Preheat the oven to 356°F (180°C), and bake the potatoes for about 35 minutes.

Meanwhile, melt the butter in a pan over medium heat. Sauté the chopped red onion and green onion until they soften and become fragrant.

Then, add the spinach to the pan, season with salt and black pepper, and cook for about 10 minutes. If needed, pour in ⅔ cup (5 fl oz) of water to help the spinach cook.

After that, sprinkle the flour over the spinach mixture and stir until well combined. Gradually pour in the milk while stirring, and season with a pinch of ground nutmeg. Cook until the sauce thickens.

Once the potatoes are done, remove the dish from the oven and spread the spinach mixture evenly over the top. Sprinkle the shredded mozzarella cheese over the spinach.

Finally, return the dish to the oven and bake for an additional 15 minutes, or until the cheese is melted and golden.
