- 3 eggs
- 1 cup of cold milk (240 ml)
- 7/8 cup of oil (approximately 200 ml)
- 3 cups (American) of shredded mozzarella cheese
- 4 cups (American) of sour starch (tapioca flour)
- 1 level tablespoon of salt
Instructions:
Let’s begin by heating the oil in a small pan over low heat until it’s very hot, but not boiling.
Then, in a bowl, place the tapioca starch and cold milk, mixing well with your hands to break up all the lumps that form. Now add the salt and mix well.
After that, pour the very hot oil over the tapioca mixture, stirring with a spoon to fully incorporate. Add the grated mozzarella and mix a little. Now add the eggs, one by one, kneading well with your hands after each addition until you get a smooth and homogeneous dough.
Next, the dough should be soft and not stick to your hands. Take small portions of the dough and shape the cookies as desired. Then place them on a baking sheet greased with butter.
Finally, bake in a preheated oven at 356 °F or 180 °C for approximately 25–30 minutes.
